What is Brisket and How to Roast It
Brisket is a great cut of meat that is often served at barbecues. It comes from the breast and lower chest of the animal. The meat is most often beef or veal.
The cut usually has fat on one side of the meat that is meant to dissolve into the rest of the meat and give it flavor as it is cooked.
There are hundreds of different ways to cook brisket and it is used for many different dishes such as pot roast or corned beef. However, the best way to cook it is a southern style slow cooked brisket. The brisket is left to marinade for hours before letting it cook.
Roasting is the best way to cook brisket because it comes out tender and melts in your mouth. The following is how to cook brisket using a convection oven.
A convection oven is preferable because the fan in the oven will even out the temperature and cook the meat more evenly.
Step 1: Prepare The Meat
For starters, let the meat sit out before cooking. This way, instead of cooling down before heating up, it will be placed at room temperature which will reduce cooking time.
You should also marinade the meat or season it before hand. This can be done with simple ingredients such as salt and pepper or something more complex as a mixture of spices. It is up to you.
Step 2: Cooking
Depending on your oven, you should preheat it according to the way of cooking the meat. Reduce or raise the temperature by 25 degrees depending on the oven.
You should reduce the temperature if it is a convection oven and raise it for a gas oven due to unevenness of the temperatures of these ovens.
From here, there are two ways to cook the brisket :
Slow cooking the roast will take a lot more time, but will be much more rewarding after the meat is done. The slow cooking method will leave the meat more tender and chewable. Slow cooking will be done at 200 degrees Fahrenheit and the meat should be left uncovered.
For every pound of meat you should give two hours of cooking time. The long time is due to the low temperature; however it will depend on how you want to ultimately have the meat cooked.
Rarer meat will have less time while well done meat will take more time. After you have finished cooking the meat, you should wrap it in foil and let it cool for half an hour.
If you are in a time constraint, then you should consider cooking at a higher temperature. The high heat will actually create a crisp layer around the tender inside.
This effect can be used to your advantage by marinating the meat in sauces that incorporate sugar or even flower. These sauces will take part of the crisp layer and add flavor and texture to the meat.
To cook at high heat let the oven preheat to 350 degrees, paying attention to the type of oven so as not to over- or undercook the meat.
Once the oven has preheated, you can place the brisket inside. The cooking time will depend on the size of the meat, but in general it should be 15 minutes for every pound of meat.
As soon as it is done cooking, take the brisket out and carefully wrap it in foil. Leave it to cool for half an hour before serving.
For both methods of cooking, you should cook the meat with the fat on top. The fats will then melt and add flavor to the rest of the meat. You should also serve the meat in thin slices so that every part of the meat and its texture can be enjoyed.
